The Lab Restaurant and Bar is a well known and loved restaurant within the Treasury Casino Hotel. It is exciting times at the moment as they are ready to launch their Autumn menu. It takes approximately three months from start to finish to create their menu and the effort is recognisable in the quality.
Sous Chef, Anita Green, wanted to make sure that current trends and the push for Queensland produce were included in the Autumn menu. The food will leave you feeling warm and fuzzy on the insides.
Entree options include Tempura Zucchini Blossoms, Twice Cooked Pork Belly and Confit Bendale Farm Organic Duck Leg. The Twice Cooked Pork Belly also comes with celeriac, Brussel sprouts and munthari berry vinaigrette. Unfortunately the pork belly does become slightly dry from cooking it twice. The crackling is super crunchy. A flavour highlight of the dish was the crispy brussel sprouts leaves scattered around the plate. Pro Tip: Also ask for bread because it smells and tastes like a donut.
Salmon, Great Southern Lamb Rack and Porcini Maltagliata are tasty and beautifully plated main meals. The Salmon was cooked to perfection and a great portion size. It sits on a bed of rainforest lime and caper faro which is a nutty wheat grain. The creamy leek aioli balanced the sour and salty faro perfectly.
Leave some room for dessert because you’ll probably want to order multiple. Coconut Mousse, White Chocolate Cheesecake and Baked Chocolate Tart are up for grabs. The perfect slice of glistening baked chocolate tart is plated with rosella gel, honeycomb and salted caramel ice cream. The dish is balanced excellently because the tart is quite bitter while the ice cream is sweet.
