Matt Moran has created his name on over thirty years of experience in the industry building his first creation in '99; ARIA (Sydney). Following suit, his second store opened it's doors to Brisbane in '09, planted along the river with a stunning view of the Story Bridge. Throughout his journey he has always believed in the quality of produce to create his dishes with. Blackbook was delighted to attend the launch of ARIA's new winter menu release last week.
I believe that seasonality is an important basis for menu production and one of the most significant ingredients in achieving a flavoursome, balanced and premium quality menu.
Moran's belief in seasonal produce radiates in his winter menu as head chef of the Brisbane flagship restaurant, Ben Russel plated some of the most beautiful, honest creations we have ever tasted. Boasting in quality, a significant amount of the menu is sourced locally - from Sunshine Coast to Gold Coast, and West of the Brisbane suburbs. Accompanied by an award winning wine menu, ARIA makes for the perfect location to indulge in this Winter.
Served with elegance and simplicity, we delighted in the Pork Belly accompanied by pear chutney, blood sausage, and crackling. The blood sausage brightened up the entree with sweetness and brought contrast to the crispy crackling.
Out to the table next was the Beef - slow cooked short rib with Jerusalem artichoke, mushrooms and black pepper. Every mouthful was a journey of flavours and a complete experience with a smooth Pinot Noir. Falling apart at a touch the rib was tender and cooked to perfection.
Comfort food at it's finest; Honey Cake with toasted rice sorbet and lavender. This dessert was an experience like no other. Plated as though it belonged on a canvas, the honey cake tasted as beautiful as it looked. The rich, sweet rice pudding seasoned with locally sourced honey and pollen was complimented by the fresh, fruity sweetness of pomegranate and sorbet.
Although the standard of the winter menu are high the service definitely stands out as ARIA's best characteristic. Going above and beyond ARIA is a place you can't help but return to. The staff are helpful, down to earth, and never fail to fulfill requests.
